For me, the answer is right there looking at you.
You simply have to stop sharing your location with the person as well. And this means you can’t see the person’s current location, and the person won’t be able to see your current location.
I don’t see the reason to continue to share location with someone who stopped sharing location with you.
If you didn’t stop sharing location with the person as well, the person will be able to see your current location, track you on Find My app and iMessage location.
However, for you, that is impossible because you can’t see someone’s location on iMessage location map, or Find My app if the person is not sharing location with you.
Can someone see your location if your phone is off?
If your phone is off, no one can see your location. The person can only see your previous location and not your current location.
Now listen, both on apple device and android device, for location sharing to work, location services must be active, share my location must be active, and there should be an active internet connection.
If the phone is switched off, all these i mentioned will not be active, so therefore no one can see you location if your phone is switched off.

Yes, someone can see your location on airplane mode with Wi-Fi because location services will be active, and as well as internet connection.
